Hang on to your hats! This recipe takes the cake and turns it (literally) on its head. Juicy and tart plums nestle in a soft, fluffy, and perfectly sweet almond cake. You won’t want to miss this plum upside-down cake — it’s THE summer cake you’ve been waiting for!

Bonus? It’s vegan and gluten-free and you will only need 10 ingredients. Let’s cook, friends!

This cake starts with the plums upside down! We arrange sliced plums (apricots also work!) in a circular pattern on the bottom of a pie pan. Generously greasing the pan with vegan butter helps to prevent the plums from sticking and the cane sugar creates a caramelized sauce

Next, we prepare the cake dough. Cane sugar, vegan butter, almond milk, and applesauce are the wet ingredients, with an optional almond extract giving it a pronounced almond flavor! For the dry ingredients, a combination of gluten-free flours (almond, potato and brown rice) gives it a light, pasty texture and a nice crumb. Other essential elements of the cake include baking powder for leavening and salt for flavor.

After spreading the dough on the plums and baking in the oven, the fruits become bubbly and tender.
